If you first had a telephone conversation, you should mention it in your letter. In this case begin with :

« Suite à notre conversation téléphonique du 15 avril 2008,  je vous informe que … »

If you already met the person, write :

« Suite à notre entretien, je me permets de vous contacter afin de … »

If you want to write a letter to someone specific, write on the enveloppe above the address :

« à l’attention de Monsieur x »

« à l’attention de Madame y »

So that you know this person will receive your letter and it won’t get lost in the company.

If you write to someone in particular, then at the beginning of your letter, do not write « Madame, Monsieur », but « Madame y », « Monsieur x ».

Same thing at the end of your letter, when you write the « formule de politesse » write :

« Je vous prie d’agréer Monsieur x l’expression de mes sentiments distingués ».

If you send documents you’ve been asked for, you must join a letter explaining what it is, who you are and your contract number.

Then :

« Madame, Monsieur,

Veuillez trouver ci-joints les documents demandés lors de notre entretien.

Cordialement »

We use « cordialement » at the end of a letter when we do not need to be too formal but have to be polite !

« cordialement » is used in emails, it’s a good compromise to be polite without a heavy and too traditional sentence.
